Prin Polsuk spent years as David Thompson's head chef at Nahm before opening a small room where the entire menu is rewritten every two months around one region or era of Thai cooking, and the Michelin Guide Thailand 2024 gave the moving target a star it has kept since.
Why go
Asia's 50 Best calls Prin "a veteran of Mandarin Oriental's Sala Rim Naam and Nahm by David Thompson... locally he is considered the unofficial ambassador of Thai cuisine" (ref). He runs the room with his wife, Thanyaporn "Mint" Jarukittikun, and the project began behind a Charoenkrung garage before moving to Yommarat Alley off Silom. The point is the format: each set resurrects "the often-forgotten traditional dishes of various regions of Thailand" (Time Out), sourced to whatever is available locally, then the whole thing is thrown out and rebuilt. The lists track it: No.29 in Asia 2024, No.47 in 2025, No.67 in 2026.

- Order: the current set, B4,290++ on TableCheck; ordering is not really the verb here. When it runs, the Regency Kapow, a basil, garlic and chili stir-fry "splashed with pineapple brandy," is the plate 50 Best names as the crowd favorite; the brave add the bee larvae with banana fritters. ref
- Avoid: loose bookings. The cancellation ladder is severe: 100% inside seven days, 50% at seven to fourteen.

should-visit — Nahm's longtime lieutenant cooking lost regional Thai dishes in a two-seating room behind Silom, with a Michelin star since the 2024 guide and a menu that expires every two months, so no two trips repeat. Gaggan calls it his underrated pick per Jeff's list, and Time Out's 5/5 reads the informality as the feature. It is the anti-trophy fine-dining night in this batch: craft first, comfort second, ceremony barely present, and walkable from the base. The two-month format also means you book on faith, which caps it just under the plan-around tier.
