Mahaniyom Cocktail Bar
Two bartenders and a chef run a single supply chain across two floors on Maha Set Road: 100 Mahaseth butchers and dry-ages downstairs, and Mahaniyom turns the trim into cocktails upstairs, each drink named for the one ingredient it uses whole. Eighteen months after the March 2022 opening it was No. 19 on the World's 50 Best Bars.

Ronnaporn "Neung" Kanivichaporn, a co-founder of Backstage Bar, opened the room with Chennarong "Jan" Bhumichitr in partnership with 100 Mahaseth chef Chalee Kader, and applied the restaurant's nose-to-tail logic to the ice well. The menu reads as a market list: Pomelo, Coconut, Orange, Squid, Cow. Orange, for one, runs an orange-infused vermouth against a distilled orange hydrosol, garnished with chips made from the leftover peels. BK Magazine describes the look as "Thai-Rococo, but with a bit of disco," neon two-headed tiger included.
Order this / avoid
- Order: the Squid, Jeff's pick, a black and white layered drink infused with dried squid and topped with squid ink; BK Magazine details the build as dried squid cooked in tomato juice with ginger brine, vodka, and sake. Then the Cow, beef trimmings infused into homemade brandy with brown butter and peppercorn, topped with milk and blue-cheese bubbles, which BK calls "a wagyu steak in a glass." The kitchen sends up snacks from downstairs, bone marrow included.
- Avoid: Monday nights. It has run Tuesday to Sunday since opening; re-confirm on Instagram before walking over.

- Booking: recommended for weekend nights; the room is one shophouse floor. Walk-ins land early in the week.
- From voco Surawong: about 1km, a 15-minute walk west along Surawong then down Maha Set Rd. Book dinner at 100 Mahaseth downstairs and make it one building, one night.
Jeff's take (his words)
- The award: 50 best cocktail bars award. They use a lot of Thai, local ingredient influences, and they name the drinks by the ingredients.
- The drinks: a beautiful black and white layered drink called "Squid," which is infused with dried squid, and squid ink is used to top the drink. "Cow," where the infusion of the liqueur is made from beef trimmings mixed with homemade brandy.
- The verdict: the drinks are not just creative, they're absolutely delicious. I travel a lot and try many drinks, and must say that you can't find cocktails like these anywhere else in the world.
Verdict (Chef Jeff ladder)
must-visit — A drink language that exists nowhere else, beef-trimming brandy and squid-ink layers built on a restaurant's off-cuts, validated fast by World's 50 Best (No. 19, 2023) and Asia's 50 Best (No. 18, 2024), and by Jeff's own palate. The 2026 slide to the extended list is a footnote; the uniqueness and craft are the basis, and it is a 15-minute walk from the hotel.
