Panificio Bonci
Gabriele Bonci turned his Panificio on Via Trionfale 100% vegan in summer 2026, building its pizzas around vegetables and plant ingredients.
Why go
Francesca Brunzo of Scatti di Gusto calls Bonci, who opened Pizzarium in 2003, a pizzaiolo who helped change the way pizza by the slice is perceived in Italy.
The Panificio was his next shop, opened in 2012 (Scatti di Gusto). He kept the half-century-old illuminated sign above the door (Scatti di Gusto). Gambero Rosso gave it Tre Pani, the bread guide's top mark, in its 2024 edition and called the shop an institution
(Gambero Rosso). Its 2027 guide named it one of three bakers who made history
(Gambero Rosso).
Brunzo reported the vegan turn in June 2026, after the shop posted a message reading until 20 July, then big news.
She read it as an agricultural choice before a vegan one: Not a pizza 'for people who do not eat something', but a pizza 'for people who want to discover something'
(Scatti di Gusto). Bonci has done this before. Katie Parla, who sells food tours in Rome, reported in 2014 that as of November 3, 2014, Gabriele Bonci's eponymous bakery on Via Trionfale is 100% vegetarian
(Katie Parla). The shop later went back on it.
The change takes away what Parla liked most. In 2024 she wrote that "the real standouts are the sandwiches (called pizze, not panini!) filled with glorious mortadella or house-made porchetta between fragrant slices of spongy pizza bianca" (Katie Parla). Annie Replogle of The Infatuation had a mascarpone tiramisù here in 2025. A vegan counter sells neither.
In 2023 Gambero Rosso wrote of the 'simple' marinara much in demand here, with a very light dough and topped with ingredients of great flavor
(Gambero Rosso). Italy Segreta sent readers to the same slice in 2025: Grab a slice of the marinara alla pala and a supplì or two for the perfect lunch. There may be a bit of a line, but it is worth it
(Italy Segreta). The bakery side made rye, multigrain, durum-wheat, einkorn and enkir loaves in 2023 (Gambero Rosso). A loaf to take home is the other reason to come.
Order this / avoid
- Order: the marinara al taglio (tomato pizza by the slice), Italy Segreta's lunch (2025).7
What locals & experts say
- Marco Radicioni of Otaleg (Gambero Rosso International, 2016): he named it in
absolute first place
and said,It is the realization of all my dreams and fullfills any desire, be it savory or sweet. The products are made with passion, love and skill. I could move in and live there!

Good to know
- Where: Via Trionfale 36. Bonci Pizzarium, on Via della Meloria a short walk away, is a separate shop with its own counter.
- How it sells: pizza is cut and sold by weight. Pizza rossa (with tomato) was 25 euros a kilo in May 2025.8
- When: in 2025 it opened all day on Monday and Saturday, with an afternoon break from Tuesday to Friday, and shut on Sunday. Check the hours before you go, since that pattern predates the 2026 change.8
Verdict
could-visit — Go to Gabriele Bonci's own bakery knowing the counter has been vegan since summer 2026, so the mortadella and porchetta sandwiches are off. It sits a short walk from Pizzarium.
