Flavio al Velavevodetto
Flavio De Maio emulsifies the cacio e pepe at Flavio al Velavevodetto with a liberal pour of starchy pasta water.
Why go
Gabriele Gervasi, chef de cuisine of Il Ristorante Niko Romito at the Bvlgari, says this is the best place in Rome for cacio e pepe, the pasta made with pecorino and black pepper. Many versions are too heavy and creamy, even at very good restaurants,
he told The Relisher in October 2026. At Flavio, it's perfectly balanced, and I can finish the entire plate and still eat something else afterward
(The Relisher).
De Maio was a tech executive and keen home cook who spent seven years in the kitchen at Felice nearby before he struck out on his own in 2009 (Katie Parla, 2015). Velavevodetto had opened under Monte dei Cocci in 1995. When he arrived, it took his name (Velavevodetto).
The carbonara is the other pasta to order. Gambero Rosso told readers in 2023 to order the carbonara with your eyes shut: pasta al dente, the right creaminess and guanciale crisp without overdoing it
(Gambero Rosso). Luca Cesari had placed it fifth equal of twenty-one in 2020 and named the guanciale, from the Antica Macelleria Falorni, cut in thick strips and deglazed with white wine (Gambero Rosso). Gambero Rosso made the fried polpette di bollito (meatballs of boiled meat) its Campione della tradizione dish for 2024 and called them the great must of the house.
The guide also sends readers to the lamb cutlets and an enormous fettina panata
(a breaded cutlet) (Gambero Rosso). In 2025 the guide found the carciofo alla giudia, the Jewish-style fried artichoke, prepared to perfection
(Gambero Rosso).
The catch is the crowd. The room seats 200 to 210 inside and 110 outside (Velavevodetto). In February 2016 Parla reported no fewer than 50 (FIVE-OH) complaints
about the food and service and advised going ideally on a weekday at lunch
(Katie Parla). Gambero Rosso tried it on a Tuesday lunch in 2025, when it served more than 100 guests without blinking
(Gambero Rosso).

Verdict
should-visit — Book a table under Monte dei Cocci for the cacio e pepe Gabriele Gervasi of Il Ristorante Niko Romito rates above all others in Rome, then order the fried bollito meatballs. The room is enormous and fills up, so a weekday is the calmer bet.
