Lamb shoulder for two; tuna tartare

Jeff's note

Cumulus Inc.

The lamb shoulder comes out at 1.2 kilograms, slow roasted with almond and red pepper, which is a portion built for two people to argue over rather than a table of four.

Why go

Andrew McConnell opened this in 2008 as his first bar and eating house, and it is the room the rest of the Trader House group grew out of. The test for a restaurant this old is whether the cooking still holds, and two independent reviewers say it does. Time Out ran a five-star review in May 2025 on a page that states the masthead pays its own bills (Time Out). Concrete Playground's write-up names the current head chef, Allan Doert Eccles, who came through Cutler, Marion, Embla and Gimlet and builds the changing half of the menu around peak-season produce (Concrete Playground). The fixed half has barely moved since the doors opened, and that stability is the argument, not an accident.

Order this / avoid

  • Order: the tuna tartare with goat's curd, green pea and mint. The 1.2-kilogram lamb shoulder for two. The cracked wheat salad with labneh, preserved lemon and barberry. Madeleines, which are baked to order, so ask early.
  • Avoid: planning the shoulder for a group of four. Order it for two and add plates around it.

What locals & experts say

  • Lauren Dinse, Time Out Melbourne, five stars, 7 May 2025: "Like many resident Melbournians interested in eating out, I'd dined at Cumulus Inc before and I knew it was good, but I didn't remember it being this good. Something stirred me to rebook a table immediately for a larger meal." The same review notes the staff welcome you "as enthusiastically as they did back in 2009". ref
  • Jade Solomon, Concrete Playground: "With Andrew McConnell's Midas touch, it's hard to go wrong, but Cumulus really gets it right time and time again. A seamless blend of outstanding food and beautiful, intuitive, attentive service makes any lunch or dinner feel special." ref
  • Time Out Melbourne Legend Award, 2018. Recorded as an award rather than a review, and it is eight years old.
  • The dissent comes from the industry, not the critics. Across 74 picks by 44 Melbourne chefs in this project's vote corpus, McConnell's Gimlet is named six times, Marion twice and Supernormal once. Cumulus Inc. is named by nobody.

Good to know

  • Where: 45 Flinders Lane, at the Paris end, in the same building as the Fortyfivedownstairs theatre.
  • Timing: open seven days from noon, through the afternoon and into the evening.
  • Booking: recommended, and walk-ins are taken every day.
  • Deals worth knowing: a $2 oyster hour and a Harvest Lunch run as specials.
  • Group of one: the marble bar takes solo diners without ceremony.
  • Food safety: Safe Food Victoria's register of convictions, updated 21 July 2026, does not list this business or this address. Victoria publishes court convictions under s.53D of the Food Act and holds each for twelve months, which is a narrower check than a UK hygiene rating.

Jeff's take (his words)

Nothing from Jeff. There is no Melbourne saved-places export in this repo, so jeff_note stays empty and the body is sourced virtual voice.

Verdict (Chef Jeff ladder)

should-visit — Seventeen years in and the cooking still carries it, which is the only question worth asking about a restaurant this old. Time Out gave it five stars in May 2025 under a stated policy of paying its own bills, and Lauren Dinse's line was that she knew it was good and did not remember it being that good. Concrete Playground's Jade Solomon rules the same way and names the current head chef, Allan Doert Eccles, who came through Cutler, Marion, Embla and Gimlet and cooks to peak season. The dishes people come back for have barely moved: tuna tartare with goat's curd and green pea, a 1.2-kilogram lamb shoulder with almond and red pepper built for two, a cracked wheat salad with labneh and barberry, and madeleines baked to order. It opens seven days from noon and takes walk-ins, which is the informality Jeff's standard rewards. What keeps it off must-visit is a specific silence: across 74 picks from 44 Melbourne chefs, McConnell's Gimlet is named six times, Marion twice, Supernormal once, and this room not at all. The critics send you here and the industry sends you up the road.

Order

  • The 1.2-kilogram lamb shoulder, slow roasted with almond and red pepper, which two people can finish and three cannot
  • Tuna tartare with goat's curd, green pea and mint, on the menu since the room opened and still the first thing to order
  • The cracked wheat salad with labneh, preserved lemon and barberry, which is the dish that explains the kitchen
  • Madeleines, baked to order and filled with lemon curd, so order them before you want them

Good to know

  • Booking: recommended
  • Timing: all-day, lunch, dinner, open-late
  • Best for: lunch, dinner, date, groups-ok, solo, drinks
  • Avoid: Booking a big group for the lamb shoulder alone. It is built for two to share; Coming for something new. The menu has held its shape for the better part of two decades and that is the point of it
  • Expert picks: Lauren Dinse, Jade Solomon

  1. [1]
Time Out Melbourne (Lauren Dinse, 7 May 2025)

five-star review, carrying the masthead's stated policy that it pays its own bills and never reviews from hosted experiences. Records the room as the winner of Time Out's Legend Award in 2018 and as McConnell's first bar and eating house. Dishes named: tuna tartare with goat's curd, green pea and mint; a 1.2-kilogram slow-roasted lamb shoulder with almond and red pepper described as perfect for two to share; Abrolhos Island scallops with carrot curry and lime; gildas with pickled pepper, olive and Freo octopus; the cracked wheat salad with labneh, preserved lemon and barberry; Valrhona soft chocolate with Earl Grey cream, orange caramel and pistachio. Her verdict on the staff: they welcome you 'as enthusiastically as they did back in 2009'

  2. [2]
Concrete Playground Melbourne (Jade Solomon, read 1 Aug 2026)

her own verdict, plus the current kitchen. Names Allan Doert Eccles, previously of Cutler, Marion, Embla and Gimlet, as head chef, and records his peak-season ethos. Menu detail beyond Time Out's: a tin of anchovies with grilled bread, chilli and lemons; zucchini galette with Emmental custard; prawns with garlic butter; swordfish with mussels and chickpeas; madeleines baked to order and filled with lemon curd. Also notes a $2 Oyster Hour and Harvest Lunch specials. Concrete Playground venue pages are evergreen and undated, so the read date is recorded instead of a publication date

  3. [3]
Cumulus Inc. (venue site, read 1 Aug 2026)

first-party: 45 Flinders Lane; 'Open Seven Days From Noon'; 'Walk-ins Always Welcome' alongside online and phone booking; 'Open since 2008'; describes a seasonal menu built on Victorian produce

  4. [4]
Safe Food Victoria, food safety register of convictions (read 1 Aug 2026)

full published register, updated 21 July 2026: 15 convictions, none this business or this address. Victoria has no FSA-style rating scheme and s.53D holds a conviction for 12 months, so this is narrower than a hygiene rating
