Severine Sloboda imports the wine and then sells it in her own shop, so the list on Nithsdale Road is whatever a French sommelier decided was worth bringing into Scotland, and you can drink any shelf bottle in for corkage.

Why go

Sloboda grew up around a Nicolas shop her mother managed in Paris, worked the floor as a sommelier at the Criterion, The Bleeding Heart, Trinity Restaurant and Angelus in London, then landed in Glasgow and founded the import business Sevslo Wine in late 2019. The shop followed in late 2020 with co-director Liam Hanlon, and the bar grew out of it (Wide World of Wine). That sequence is why the range runs deep on small European growers farming organically or biodynamically with minimal cellar intervention rather than on recognizable labels. The food followed the same instinct: small plates built around pickles, ferments and condiments made in house, which is the correct thing to put next to high-acid, low-sulfur wine.

Order this / avoid

  • Order: whatever Sloboda has open by the glass, then pull a bottle off the shelf and pay corkage. On a sample small-plates menu the kitchen ran bresaola with goat gouda, whipped smoked cod roe, potato with apple aioli, fregola with smoked haddock and duck rillettes. ref
  • Avoid: planning dinner around it. This is snacks and small plates, and the wine is the reason to be in the room.

Good to know

  • Timing: the shop opens late morning most days, the bar from mid-afternoon, closing 10pm midweek and 11pm Friday and Saturday.
  • Booking: walk-in. Worth calling ahead for a group, and the winemaker evenings sell tickets in advance.
  • Getting there: 166-168 Nithsdale Road, about five minutes on foot from Pollokshields West station, in the Southside rather than in town.

Craft signals (wine: the importer is the buyer)

The cadence signal here is structural rather than announced. Severine Sloboda imports the wine she pours, so the by-the-glass board moves with what she has just brought in rather than with a printed list, and winemaker nights put the growers themselves in the room. The second signal is the buying itself: small European producers, low intervention, sold at shelf price plus corkage rather than at restaurant markup. Both are drink-side, and neither is a rating.

must-visit — Plan around it if you care about wine. Two independent interests name it in the industry guide and both are natural-wine festival founders, so the endorsement lands squarely inside their own field, which is where a vote counts most (docs/CHEFRANK.md topic fit). The buying is the point here and the people who buy for a living are the ones pointing at it.

Order

  • Anything Severine Sloboda has open by the glass, since what is pouring moves with what she imports
  • A bottle off the shop shelf drunk in, which is how the corkage model works here
  • The small plates built on house pickles, ferments and in-house condiments
  • Whatever the low-intervention grower on the counter is, if a winemaker night is on
